After she passed, I continued to make it every year in her memory, and because it is my favorite cake too! On what would have been my mom’s 70th birthday, I decided to recreate her favorite cake as a cookie —and the Autumn Apple cookie was born. The result blew me away, bringing all the flavors of my mom’s cake together in one cookie. This cookie brings the perfect taste of fall and a little piece of home. 💕
