The Autumn Apple cookie was inspired by a beloved family applesauce cake recipe that was passed down from my grandmother. It became my mom’s favorite cake, and my mom and I made it together every year for our birthdays. After she passed, I continued to make it every year in her memory, and because it is my favorite cake too!

On what would have been my mom’s 70th birthday, I decided to recreate her favorite cake as a cookie —and the Autumn Apple cookie was born. The result blew me away, bringing all the flavors of my mom’s cake together in one cookie.
